How to make Kothimbir Vadi (Coriander Fritters )

Kothimbir Vadi (Coriander fritters)

Traditional Maharashtrian snack. It is easy to make and superb in taste.Crispy side dish during meal.

Its a spicy blend of Fresh coriander leaves and gram flour. I am sharing an easy method to make it…

Recipe as follows .….

Ingredients :

  • 1 cup fresh coriander leaves chopped
  • 1 cup gram flour (besan)
  • 1 tsp ginger chilli paste
  • Pinch of asafoetida
  • 1/2 tsp garam masala powder
  • 1 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp cumin seeds
  • 1 tsp sesame seeds
  • 2 tsp oil
  • Salt to taste
  • Oil for deep frying

Method:

  1. In a big bowl put all the ingredients.
  2. Coriander leaves, besan, ginger chilli paste, turmeric powder, red chilli powder, cumin seeds, sesame seeds, oil, asafoetida, garam masala powder and salt.
  3. Make a thick batter by adding sufficient water at a time and mix well. 12271140_10207979447434876_578320768_o
  4. Adjust spices and salt as per your taste.
  5. Heat 2 cups of water in a steamer or big broad pan. Grease plate with oil. Pour batter into the greased plate and steam for around 15 to 20 minutes.12287203_10207979447474877_144287377_o
  6. To Check, insert a tooth pick and it should come out clean.
  7. After cooling down cut Kothimbir vadi into diamond or square pieces using a knife.

  9. In a deep frying pan heat oil on medium flame.
  10. Fry Kothimbir vadi pieces on slow or medium flame till it turns golden brown in colour.12290611_10207979448074892_180070052_o

How to make Perfect no fail Eggless Vanilla Sponge Cake…

  1. Preheat your oven at 170 to 180 degree C.
  2. You can use hand blender to blend all the ingredients quick and easily.
  3. Take the curd in a big bowl,  add sugar, vinegar, oil, milk and vanilla essence. Make a smooth paste.

  5. Sieve all the dry ingredients.

  7. Now in a bigger bowl add dry ingredients into wet ingredients in a small batch. Mix with cut and fold method.12270332_10207955620719223_1543835102_n
  8. Mix well. Add milk if batter is too thick.
  9. Grease a 8” Baking tray with oil. Place butter paper/ parchment paper on the bottom of the tray or dust with flour.

  11. Place the tray inside an oven. Bake for 25 to 30 minutes.

How to make spicy, Crispy Chakli from Bhajani flour (Bhajanichi Chakali)

Chakli is a favoured snack and is simple to make.. It’s popular savory snack usually made during Diwali. You need to make bhajani flour before making chakli. I used readymade bhajani flour which is available in markets.

Ingredients :

  • 1 Cup Bhajani flour
  • 1 tsp Red Chilli Powder
  • 1/4th tsp Turmeric Powder
  • 1 tsp Sesame Seeds
  • 1 tsp Cumin Seeds
  • 1 tsp Carom seeds
  • 1 tsp Oil
  • 1 Cup Water
  • Salt to taste
  • Oil for Frying

Method:

  1. In the heavy bottom pan add water, red chilli powder, turmeric powder, salt, sesame seeds, cumin Seeds, carom seeds, salt and oil. 12231419_10207922156842647_1736273933_n

  3. Now add bhajani flour to the mixture and mix well.

  10. Make chakali on foil in circular direction and close both the ends.
