How to make Tangy, Spicy Sprouted Moth Bean Curry / Matki usal..

Tangy, Spicy Sprouted Moth Bean Curry /Matki usal is a Maharashtrian dish.

All time favourite of my kids. Simple and easy to make curry.  Enjoy this yummy curry with Rice, Bread, Roti or Chapati.

I want to share this simple recipe with you ….

Ingredients :

  • 1 cup Moth Bean (Sprouted)
  • 1/2 cup Grated Coconut (Dry/ Fresh)
  • 2 tbsp Oil
  • Pinch of Asafoetida
  • 1/2 tsp Cumin Seeds
  • 1 Medium sized Onion
  • 1/2 tsp Green Chilli Paste
  • 1 tsp Ginger Garlic Paste
  • 1 and 1/2 tsp Red Chilli Powder
  • 1/2 tsp Turmeric Powder
  • 1 tsp Coriander Powder
  • 1 tsp Cumin Powder
  • 1 tsp Garam Masala Powder
  • 1 small Tomato
  • 1 tsp Lemon Juice
  • Salt to taste
  • Coriander leaves for garnish.

 

Method of sprouting moth bean:

  1. Soak moth bean in sufficient water for 7 to 8 hours.2015-11-28 20.43.062015-11-28 20.46.51

Method of making Moth bean Curry:

  1. In a small pan dry roast coconut on slow flame. After cooling down grind in a smooth  paste and keep aside.ddwww
  2. I made this curry in a pressure cooker.
  3. Heat oil, add asafoetida and cumin Seeds.
  4. After cumin seeds changed colour add chopped onion and saute till it become golden brown.
  5. Add ginger garlic paste, green chilli paste and saute it.
  6. Add finely chopped tomato, red chilli Powder, turmeric powder, coriander powder, cumin powder and salt to taste and mix well.2015-11-27 14.34.18
  7. Roast till it leaves oil from the sides of the pot. Add Moth Bean sprouted and mix well.2015-11-27 14.32.44
  8. Add 1 cup water and close the lid of cooker. Take 2 whistles and switch off the flame.
  9. After opening the lid of the cooker add  lemon juice, garam masala powder, coconut paste and simmer on slow flame13319838_10209565113075526_2588997800957234314_n
  10. Add enough water to make a thin curry. Adjust spices asper your taste.

How to make yummy Split Green Gram fritters (Pakoda)..

Split green gram fritters means chilkevali moong daal ke pakode. Its an easy and healthy  yummy snack item. Taste delicious in cold or rainy season with a hot cup of tea.

Sharing simple recipe with you..

Ingredients :

  • 1 cup split green gram/ Chilkevali moong daal
  • Pinch of Asafoetida
  • 1/2 tsp Cumin Seeds
  • 1 tsp Ginger chilli Paste
  • 1 and 1/2 tsp Red Chilli Powder
  • 1/2 tsp Turmeric Powder
  • 2 tbsp Gram flour (Besan)
  • 2 medium onions
  • 2 tbsp chopped coriander
  • 2 tsp hot Oil
  • oil for frying

Method :

  6. In a deep fry pan heat oil on medium flame.  Drop small portions of batter at a time with the help of a spoon.

How to make 2 minutes Eggless Chocolate Mug Cake ….

Chocolate Mug Cake is quick and easy to make in just 2 minutes. I made it eggless and butter less. Its fullfills my quick carving for chocolate. Sharing my simple recipe with you all….

Ingredients :

  • 3 tbsp All Purpose flour/ Maida
  • 3 tbsp Sugar
  • 3 tbsp Milk
  • 3 tbsp oil
  • 1 tsp Vinegar
  • 1/8 tsp Salt
  • 1/8 tsp Baking soda
  • 1/8 tsp Vanilla essence
  • 2 tbsp cocoa powder
  • 1 tbsp choco chips

Method:

  7. To check if it is cooked, insert a bbq stick and it should come out clean.

How to make Rice Ghavan

Rice Ghavan is a maharashtrian dish. Its a kind of a soft pancake . Quick and delicious ghavan can be made with just a few ingredients. Its a easy breakfast or snack item. My way of making ghavan is as follows..

Ingredients :

  • 1/2 cup Rice flour
  • Salt to taste
  • 1 tsp Oil
  • 1 to 1 and 1/2 cup water
  • oil to grease the tawa

Method:

  1. Before making ghavan you need to prepare rice flour as followes..
    • Wash and drain rice.
    • Dry it completely.
    • Grind coarsely in flour mill.
    • Rice flour is ready to use.
  2. In a big bowl take rice flour. Add salt to taste and mix well.
  3. Add water and make smooth paste with no lumps. Adjust the consistency of the mixture to make a watery batter.
  4. Add oil and mix properly and keep aside for half an hour.12583845_10208419832524228_1603658257_n
  5. Heat a non stick tawa or dosa pan on medium flame. Grease the tawa with oil.

How to make Crispy and Spicy Thalipeeth..

Thalipeeth is a Maharashtrian dish. Its type of savoury pancake. This is made of using different flours. Add vegetables like cabbage, cucumber or Bottle gourd (Lauki) instead of onion to get varities in Thalipeeth.

Simple to make but before making Thalipeeth you need to be ready with Bhajni flour.

Recipe For Bhajani  Flour as follows….

Ingredients:

  • 1 kg Rice
  • 1/4 kg Jowar
  • 100 gram Urad Dal
  • 100 gram Chana Dal
  • 20 gram Coriander seeds
  • 20 gram Cumin seeds
  • 10 gram Fenugreek seeds
  1. Wash and drain rice. Dry it completely.
  2. Dry roast all the Ingredients one by one till it change the colour.
  3. Grind all ingredients in flour mill.
  4. Bhajani flour is ready to use.

 

Recipe for making  Thalipeeth is as follows…

Ingredients:

  • 1 cup Bhajani Flour
  • 1/4 cup Wheat Flour
  • Pinch of Asafoetida
  • 2 tsp Oil
  • 1 tsp Cumin Seeds
  • 1 tsp Sesame Seeds
  • 1 Onion finely chopped
  • 1/4 cup Coriander leaves finely chopped
  • 2 tsp Red Chilli Powder
  • 1/2 tsp Turmeric Powder
  • Salt to taste
  • 1/2 cup Boiled water
  • Warm water to knead the dough
  • 2/3 Green Chillies finely chopped (Optional if you want more spicy)

Method :

  1. Take Bhajani flour in a big bowl.
  2. Add Wheat Flour, Oil, Cumin Seeds, Sesame Seeds, Red Chilli Powder, Turmeric Powder, Pinch of Asafoetida and Salt to taste. Mix well.12583746_10208365883255530_508367287_n12576054_10208365883135527_84109906_n

  8. Apply few drops of oil on plastic and place a ball.

  10. Heat oil in a deep kadhai or pan on medium flame.

How to make Sol kadhi (Kokum Curry)

Sol kadhi is a delicious curry which can serve with rice or any non veg dish like mutton or chicken curry. This curry can be drunk after finishing your food for digestion. It is made from kokum and coconut..

Simple recipe of making sol kadhi with few ingredients as follows….

Ingredients :

  • 1 Fresh Grated Coconut
  • 6 to 8 Dried Kokum Petals
  • 1/2 cup Hot Water
  • 5/6 Garlic Cloves
  • 2 small Green Chillies
  • 1 tsp Cumin seeds
  • Salt to taste
  • Chopped coriander for Garnish

Method:

  1. Soak Kokum Petals in a hot water for around 3 to 4 hours or overnight to make kokum juice.2016-01-21 11.14.10
  2. In a Mixer grinder add garlic cloves, green chillies, cumin seeds and grated coconut.
  3. Add 1/2 cup water. Grind it and make fine paste. Strain coconut milk with the strainer.
  4. Add 1/2 cup water again and mix well. stain coconut milk again. Do this procedure 2/3 times to get thick coconut milk with the flavour of chilli garlic and cumin.
  5. Add salt to taste.
  6. Now add Kokum juice and mix well.2016-01-10 19.47.46

How to make wheat flour deep fried “Gujiya/ Karanji” ..

Wheat flour deep fried Gujiya/ Karanji are delicious sweets, made with jaggery and fresh coconut filling. Its a traditional Maharashtrian and Gujarati sweet dish.

 

I am sharing my way of making crispy Gujiya.

Recipe as follows..

Ingredients :

For Making the Filling

  • 1 cup fresh grated coconut
  • 1 cup grated jaggery
  • 1 tsp ghee
  • 1/2 tsp poppy seeds
  • 1/2 tsp nutmeg powder
  • 1/2 tsp cardamom powder

For Making Outer Cover

  • 1 cup wheat flour
  • 1 tsp fine semolina
  • 2 tbsp melted ghee or oil
  • Salt to taste
  • Water
  • Oil/ Ghee for deep frying

Method:

Method of Making Inside Filling :

  1.  In the heavy bottom pan add  ghee, fresh grated coconut, jaggery and poppy seeds.
  2. Mix well.

  4. Cook on slow flame until jaggery melts and mixes with coconut.
  5. Add cardamom powder and nutmeg powder.
  6. Mix well and switch off the flame.
  7. Gujiya filling is ready to use.

  9. Keep filling aside to cool.

Method of Making dough :

  1. In a big bowl take wheat flour, semolina and salt and mix well. 2015-12-09 09.07.35
  2. Add oil or ghee, Mix well till get crumbly texture.
  3. Now add little water at a time and start kneading the dough. Dough should not be too tight or too soft.2015-12-09 09.08.59
  4. Cover the dough and let it rest for 30 minutes.
  5. Dough is ready to use.

 

Method of Making Gujiya  :

  1. Once again kneed the dough.
  2. Divide it and make small balls.
  3. Make a small circle with rolling pin.
  4. Add filling and make the shape of Gujiya using press and fold method or with fork.

Method of Frying Gujiya:

  1. In a deep frying pan heat oil on low flame.
  2. Fry  Gujiya on low flame till it turns golden brown in colour.

  5. Delicious Gujiya is ready to eat……. enjoy!!!

 

Note: Finish this sweet that day itself or next day as it contain fresh coconut.

How to make Lapsi / Sweet Dalia / Cracked Wheat Halwa (without milk)

Everyone’s all time favourite Lapsi is a very quick and easy dessert to make. It is also known as sweet dalia or cracked wheat halwa. It is made on auspicious occasions. My kids loved it and request me to make it again and again. Here is the recipe that I want to share with you all…

I am showing my method of making this Traditional Gujarati Sweet. Making this Halwa recipe without using milk. Amazingly yummy sweet dish….

Ingredients :

  • 1 cup Lapsi / Dalia/ Cracked wheat
  • 2 tsp Oil
  • 3/4 cup Ghee
  • 2 Cinnamon Sticks
  • 4 Cloves
  • 1 cup Sugar or Jaggery
  • 2 to 3 cups Water
  • Pinch of Cardamom powder
  • 1 tbs chopped nuts like Cashews and Almonds
  • Some Raisins

Method:

  1. In a big bowl add Lapsi. Add oil into Lapsi and mix well. Lapsi should be coated with oil, to keep all the pieces of grain separate after cooking.
  2. Make hot water and keep aside.
  3. Heat ghee in a pan. Add cinnamon sticks, cloves and lapsi on slow flame.12769630_10208656733006592_969338479_n
  4. Roast lapsi till it change its colour to light golden brown.
  5. In that add crushed nuts and  roast for a min.12803983_10208656736286674_374627905_n

  7. Mix well and cover with the lid.
  8. Let it simmer for 5 to 7 min. Stair in between. It will soak all the water. Add more water if lapsi is under cooked.

  11. Cover with the lid and let it simmer for around 5 minutes.
  12. Cool for some time then serve.

How to make Sukhadi/ Gol Papadi/ Gul Papadi…

Gol Papadi is yummy and delicious in every bite, mouth melting Traditional and Healthy sweet.

Its simple recipe and easy to make with few Ingredients ..

Ingredients :

  • 2 cups Wheat Flour
  • 1 cup Melted Ghee
  • 1 cup Grated Jaggery
  • 1/2 tsp Cardamom Powder
  • 1/2 tsp Nutmeg Powder
  • Pinch of Saffron Strands
  • Coarse grounded Almond, Pistachio and cashewnuts

Method :

  1. In a heavy bottom non stick pan add ghee. Roast wheat flour on slow flame till golden brown color.12490129_10208269734451870_2024137785_o
  2. You will get nice aroma of wheat flour. Once you get dark golden brown colour then switch off the flame.12490064_10208269734411869_1973075039_o
  3. Add grated Jaggery, Cardamom Powder, Nutmeg Powder, Pinch of Saffron Strands and Coarse grounded Almond, Pistachio and cashewnuts.12490193_10208269735371893_1747720623_o
  4. Stir continuously, Mixture will become thicker.

  6. Garnish with Coarse grounded Almond, Pistachio nuts.
  7. Run a knife to cut Gol papadi in to pieces before it cooling down.

How to make Sabudana vada (Sago Patties)…

Sabudana vada/ Sago patties

It is mostly made during the fasting time.  It is very easy recipe if you have all the ingredients ready. I used appam patra (Appe pan) to fry Sabudana vada so that it consume less oil and become more healthy.  Here is the recipe of yummy, spicy and crispy Sabudana vada,  I want to share with you all…

Ingredients :

  • 1/2 cup sabudana (Tapioca pearls/ sago)
  • 1/2 cup water to soak sabudana
  • 3 boiled potates
  • 1/2 cup rosted peanuts crushed
  • 7/8 cashew nuts crushed
  • 1 tsp chilli and Ginger paste
  • 1 tsp cumin seeds
  • 2 tsp lemon juice
  • Sendha namak/ Rock salt as per taste
  • Ghee for frying

Method :

  1. Wash and soak Sabudana for 5/6 hrs in water.
  2. In the soaked sabudana add rosted peanuts (crushed), chilli and ginger paste, cumin seeds, lemon juice and salt.2015-11-29-16-59-58
  3. Mix well.
  4. Add the boiled potatoes for binding the  mixture and make small balls. Add 1 tsp water if required.2016-02-26 14.31.42
  5. Heat appam patra on slow flame. Add few drops ghee and keep balls to fry.2016-02-26 14.29.05
  6. Cover with lid and cook for few minutes.

  8. Fry on slow frame from both the sides.
