Veggie Open Toast ?

It is a quick and easy breakfast item. A good snack for anyone when in a hurry.

I am sharing my way of making yummy Veggie Open Toast the easy way…

Ingredients :

  • 1 cup roasted suji/ semolina
  • 1/2 cup rice flour
  • 1 cup curd
  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp ginger chilli paste
  • 1 tsp red chilli powder
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped tomato
  • 1/2 cup finely chopped capsicum
  • 1/2 cup grated carrot
  • 1/4 cup finely chopped coriander leaves
  • Salt to taste
  • 6 to 8 white or brown bread slices
  • Butter or ghee to grease the tawa

Method:

  1.  Take roasted suji in a big bowl. Add rice flour, curd, oil, cumin seeds, turmeric powder, ginger chilli paste, chilli powder, onion, tomato, capsicum, carrot, coriander leaves and salt. mix well.   2. Spread veggie mixture on bread slice properly.
  3. Heat non stick tawa or pan on slow flame and spread some butter.
  4.  Place bread slice on tawa. Put it mixture side down.
  5. After 2 minutes spread butter and flip onto the other side.

How to make Eggless Whole Wheat Chocolate Cupcakes ❤

  1. Preheat your oven at 170 to 180 degree C.
  2. You can use a hand blender to blend all the ingredients quickly and easily.
  3. Take the curd in a big bowl,  add sugar, lemon juice, oil, milk and vanilla essence. Make a smooth paste.12271114_10207955620159209_1367609686_o
  4. Sieve all the dry ingredients.Whole wheat flour, cocoa powder, baking powder, salt and baking soda.
  5. Now in a bigger bowl add dry ingredients into wet ingredients in small batches and  mix well.

  7. Grease 6 cupcakes tray with oil and dust with flour or use cupcake liners.

How to make Seviya/ Vermicelli Custard Kheer..

Everyone’s all time favourite sweet is a very quick and easy dessert to make. It is made on auspicious occasions.

I am showing my method of making this amazingly yummy sweet…

Ingredients :

  • 1 cup Seviya/ Vermicelli
  • 1 ltr Milk
  • 2 tbsp Ghee
  • 1 cup Sugar
  • 4 tbsp Vanilla custard powder
  • 1/4 tsp Cardamom powder
  • Chopped nuts like Cashews and Almonds
  • Some Raisins and Chironji

Method:

  1. Boil milk and keep aside.
  2. Heat ghee in a deep pan on slow flame.
  3. Add seviya and roast till it changes colour to light golden brown.

  5. In that add crushed nuts and  roast for a min.
  6. Pour the  hot milk carefully to avoid  splutters.
  7. Let it simmer for 5 to 7 min. Stir in between.
  8. Now add sugar and mix well.
  9. In a small bowl add custard powder and water and mix well.

  11. Pour custard powder and water mixture and stir continuously.
  12. It will immediately start to thicken.
  13. Finally add cardamom powder, raisins and chironji.
  14. Let it simmer for around 5 minutes.
  15. Cool for some time then serve.

Crispy Methi Masala Puri and Diamonds

My kids all time favourite snack . It is easy to make and enjoy with cup of tea.

sharing simple recipe with you

Ingredients :

  • 1 cup all purpose flour (maida)
  • 2 tbsp semolina (suji)
  • 1/2 tsp kasuri methi
  • 1/4 tsp cumin seeds
  • Pinch of asafoetida
  • 1 tsp red chilli powder
  • 1/2 tsp turmeric powder
  • Salt to taste
  • 2 tbsp oil
  • Oil for deep frying
  • Water as required

  1. Take maida, suji, cumin seeds, kasuri methi, asafoetida, red chilli powder, turmeric powder and salt in a bowl and mix well.
  2. Add oil, mix well till get crumbly texture.
  3. Now add little water at a time and start kneading the dough. Dough should not be too tight or soft.
  4. Cover the dough and let it rest for 30 minutes.
  5. Other side heat the oil in a pan on slow or medium heat for frying puri and diamonds.
  6. Once again knee the dough.
  7. Divide it and make big circle with rolling pin.
  8. Cut into circle shape using small round cutter.
  9. Cut into diamond shape using knife.
  10. Prick the puries and diamonds all over with a fork or spoon end.
  11. Keep pieces on dry cloth.
  12. Once oil is hot enough, add pieces in the oil.

  14. Fry till it become golden brown on slow flame.

Kairi Panha / Raw Mango drink?

It is cool, refreshing and energetic drink at any time. This natural and traditional Maharashtrian drink is very easy to make. Here is a simple recipe of Kairi Panha  with only a few ingredients as follows….

Ingredients :

  • 2 raw mangoes
  • 1 cup sugar
  • 1/2 tsp cardamom powder
  • Salt taste
  • 2 cup cold water
  • Some ice cubes
  • Mint leaves for garnishing

Method:

  1. Wash Mangoes properly and and pressure cook them.
  2. After cooling down peel the skin and remove it and seed till you are left with mango pulp.
  3. In a mixer grinder add raw mango pulp, sugar, cardamom powder and salt.
  4. Add 1/2 cup water. Grind it and make fine paste.13595894_10209811264429156_1484072481_n
  5. Strain mixture with the strainer.
  6. Add water and mix well.
  7. Adjust sweetness asper the taste.
  8. Garnish with ice cubes and mint leaves.
  9. Yummy and delicious  Kairi Panha is ready.

  2. You can use a hand blender to blend all the ingredients quick and easily.

How to make Eggless, Butter less, Whole Wheat Chocolate Cooker Cake ?

Eggless, Butter less, whole wheat Cooker Cake
(No condensed milk added )

This is my 2nd “Cooker cake”.  Its very soft, moist and yummy in taste. Very easy to make with few ingredients. This year we celebrated Father’s Day with this yummy Cake.  Sharing simple Recipe with you all…

Ingredients :

  • 1 and 1/4 cup whole wheat flour
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup curd
  • 1 tsp lemon juice
  • 2 to 3 tbsp milk
  • 3/4 cup sugar
  • 1/2 cup oil
  • 1 and 1/2 tsp vanilla essence
  • A pinch of salt

Method:

  1. Take the curd in a big bowl,  add sugar, lemon juice, oil, milk and vanilla essence. Make a smooth paste. You can use hand blender to blend all the ingredients quick and easily.12271196_10207955620079207_922176243_o

  4. Add 1 tbsp milk more if the batter is too thick. Mix well.untitled
  5. Grease a 7 to 8” pan with oil and dust with flour.untitledccc
  6. Pour the batter and tap gently to remove air bubbles.
  7. Use big size Aluminium coooker and pot.
  8. Remove “Gasket” and “whistle” of the lid of your Pressure Cooker ( I used normal dish to cover).
  9. Do not add any water.
  10. Heat cooker on medium heat for 5 minutes.

  12. Bake for 40 to 45 minutes on low heat. Check in between.

Note: A pressure cooker is not meant for baking.

High heat may cause parts of cooker deteriorate a bit.

For oven use:

  1. Preheat your oven at 170 to 180 degree C.
  2. Place the tray inside an oven. Bake for 30 to 35 minutes.
  3. To check if it is cooked, insert a tooth pick and it should come out clean.

How to make Methi Vadi (Fenugreek Fritters)

Methi Vadi (Fenugreek Fritters )

Its a spicy blend of fresh fenugreek leaves and gram flour. Easy to make and superb, crispy side dish during meal.

I am sharing an easy way of making Methi Vadi. ☺

Recipe as follows .….

Ingredients :

  • 1 cup fresh Methi leaves chopped
  • 1 cup gram flour (besan)
  • 1 tsp ginger chilli paste
  • Pinch of asafoetida
  • 1/2 tsp garam masala powder
  • 1 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp cumin seeds
  • 1 tsp sesame seeds
  • 2 tsp oil
  • Salt to taste
  • Oil for frying

Method:

  1. In a big bowl put all the ingredients.
  2. Fenugreek leaves, besan, ginger chilli paste, turmeric powder, red chilli powder, cumin seeds, sesame seeds, oil, asafoetida, garam masala powder and salt.
  3. Make a thick batter by adding sufficient water at a time and mix well. 12271140_10207979447434876_578320768_o1-3
  4. Adjust spices and salt as per your taste.
  5. Heat 2 cups of water in a steamer or big broad pan.
  6. Grease plate with oil. Pour batter into the greased plate and steam for around 15 to 20 minutes.12287203_10207979447474877_144287377_o-2
  7. To Check, insert a tooth pick and it should come out clean.

  9. You can store in airtight container in the freezer.

Methi Ghavan/ Fenugreek Rice Dosa ?

Its a kind of a soft pancake.  Quick and easy to make with just a few ingredients. Its a easy breakfast or snack item. Added small twist in Maharashtrian Rice Ghavan / Dosa . . ..?

My way of making ghavan is as follows.. .

Before making ghavan you need to prepare rice flour as follows..

  1. Wash and drain rice.
  2. Dry it completely.
  3. Grind coarsely in flour mill.
  4. Rice flour is ready to use.

 

Ingredients :

  • 1 cup rice flour
  • 2 tsp semolina (Suji)
  • 1/2 cup finely chopped fenugreek leaves
  • 1 tsp ginger chilli paste
  • 1/4 tsp turmeric powder (optional)
  • Salt to taste
  • 1 tbsp oil
  • 1 to 1 and 1/2 cup water
  • oil for greasing

Method:

  1. In a big bowl take rice flour. Add finely chopped fenugreek leaves, Semolina, ginger chilli paste, salt to taste and mix well.
  2. Add water and make smooth paste with no lumps. Adjust the consistency of the mixture to make a watery batter.

  4. Heat a non stick tava or dosa pan on medium flame.

How to make Fried Modak ..

Modak, a delicious sweet made with jaggery and fresh coconut filling. Its a traditional Maharashtrian  Ganesha’s favourite sweet.

I am sharing my way of making crispy fried Modak .

Recipe as follows..

Ingredients :

For Making the Filling

  • 1 Cup Fresh Grated Coconut
  • 1 Cup Grated Jaggery
  • 1 tsp Ghee
  • 1/2 tsp Poppy Seeds
  • 1/2 tsp Nutmeg Powder
  • 1/2 tsp Cardamom Powder

For Making Outer Cover

  • 1 Cup Wheat Flour
  • 1 tsp Semolina
  • 2 tbsp Melted Ghee or Oil
  • Salt to taste
  • Water
  • Oil for deep frying

Method:

Method of Making Inside Filling :

  1.  In the heavy bottom pan add  Ghee, Fresh Grated Coconut, Grated Jaggery and Poppy Seeds.
  2. Mix well.

  4. Cook on slow flame until jaggery melts and mixes with coconut.
  5. Add cardamom powder and nutmeg powder.
  6. Mix well and switch off the flame.
  7. Modak filling is ready to use.

  9. Keep filling aside to cool.

Method of Making dough :

  1. In a big bowl take wheat flour, semolina and salt. Mix well. 2015-12-09 09.07.35
  2. Add oil or ghee, Mix well till get crumbly texture.
  3. Now add little water at a time and start kneading the dough. Dough should not be too tight or too soft.2015-12-09 09.08.59
  4. Cover the dough and let it rest for 30 minutes.
  5. Dough is ready to use.

 

Method of Making Modak  :

  1. Once again kneed the dough.

  3. Make the shape below with the help of your 2 fingers.
  4. Add filling inside the shape.
  5. Bring together all the eges and make modak.
  6. Make all modaks.

 

Method of Frying Modak :
